14 ounces (400grs) of Pavesini cookies
16 ounces plus 2 tablespoons Mascarpone cheese
4 eggs
1/2 cup sugar
10 ounces STRONG coffee
1/8 cup (approx) cocoa powder
4 teaspoons Brandy
Take eggs and separate the yolks from the whites. with an electric beater work the yolks with the sugar until cream is obtained. Add the mascarpone and brandy.
Beat with an electric beater the egg whites until firm peaks and then fold the cream mixture in by hand.
Cover a 9 x 9in pan with a layer of cream.
Dunk the Pavesini cookies into the coffee and place them on the layer of cream. Cover cookies with the cream and sprinkle with cocoa powder. Continue to alternate the layers until ingredients are finished. The top layer should be cream, which then is topped with a generous sprinkle of cocoa powder.
Chill 1 hour before serving.
