15 thick skinned lemons
2 - 750ml bottles 100 proof Vodka
4 cups sugar
5 cups water

Combine 1 bottle of vodka and the zest of all the lemons. Cover and store it at room temperature in a dark cabinet.

After 40 days combine the sugar and water in a sauce pan. Bring to a boil and cook until thickened, about 5 minutes. Let syrup cool.

Add cooled syrup to the limoncello with other bottle of Vodka.

Cover and return to the cupboard for another 40 days.

Decant into bottles and store in the freezer.
