3 cups flour
3 large egg
2 tablespoons water
1 tablespoon olive oil
pinch salt
Pour flour on a clean surface. Make a well in the flour and sprinkle with salt. Put cracked eggs in the well of the flour.
Slowly mix with hands. Knead dough until smooth and elastic. Work into a ball.
This is the base recipe for all kinds of fresh pasta (ravioli, tagliatelle, lasagna, tortellini, etc.)
