Ingredients and Preparation Method

2 pounds fresh mussels
4 ounces bread crumbs
2 ounces Parmesan cheese
4 tablespoons finely chopped fresh parsley
4 cloves large cloves garlic, finely chopped
pinch salt
pinch pepper
2/3 cup extra virgin olive oil
Preheat oven 400.
Thoroughly scrub the mussels, removing all beards and barnacles.
Steam mussels - approx. 5 min.
Combine other ingredients - minus oil.
Remove mussels from liquor and set both aside.
Remove top shell from mussels and place bottom with mussels attached on a baking
sheet.
Sprinkle breadcrumb mixture over each mussel.
Combine oil and liquor and pour a little on each.
Bake 3 - 4 minutes.
